Stewing hens (and roosters) are retired from our egg laying flock, and are typically available in the early fall. They are very flavorful, but more limited in cooking methods that you can use, compared to our broiler chickens. Here are some important things to know before you buy a stewing hen:
In order to get the meat tender, you have to cook them for a long time, with low heat and with some moisture provided. They are perfect for a crock pot meal!
There is much less breast meat than there is on our broiler chickens.
On some birds, some small, hairlike feathers remain on the bird. These effectively disappear during cooking.
These are a great option for making chicken soup or chicken stock.
Birds under 3 lbs are all hens; between 3-4 are a mix, and over 4 lbs. are all roosters.
